It has been a while since I shared a recipe win!! We tried a new one last night and it was SO easy. If you keep Mexican ingredients on hand regularly like we do, you might even have everything you need in your pantry right now. We made this chicken tortilla soup in the Instant Pot, but the recipe has variations for the stovetop and for a slow cooker in case you don't have an Instant Pot. But we use ours all the time! This took no time at all and was the perfect warm dinner after a long ... View the Post
Instant Pot Red Beans and Rice
I made red beans and rice the other day and shared it on my Instagram stories and got so many requests for the recipe! This was really easy to make... you basically cook it all in the Instant Pot and let it finish the cooking for you. Photo and recipe credits to: Damn Delicious This was really hearty and comforting after a long, cold day. Perfect for those snowy nights! I like it too because it's full of wholesome ingredients, plus it has lots of flavor. It has a little spice, which I like. ... View the Post

Instant Pot Turkey Enchilada Soup

It turned out to be so delicious and there was even enough for leftovers. My younger two thought it was a little spicy. I think rotel in general is a little bit spicy even if you get the mild one so if that is a concern, you can probably leave the rotel out altogether. I made this in the instant pot, ... View the Post
