I love any recipe that involves my instant pot. Anyone have any guesses as to why? Well, it means all the work typically goes into prepping, but even that usually isn’t very time-consuming. For this recipe in particular, it only takes 30 minutes total. About 15 minutes prepping your ingredients and the other 15 minutes, the instant pot is doing all the work!
Have you guys ever set your cooking timer and thought everything was good to go, and come to find out that you forgot to seal the venting knob? Sadly, that was me last night so unfortunately the cooking time was a tad bit longer for me haha. Lesson learned! At the end of the day, this recipe is sooo easy to make and quite delicious. - 1 pound boneless skinless chicken breasts
- 12 ounces –16Andouille sausage sliced
- 1 14- ounce can fire roasted crushed tomatoes
- 2 tablespoons –3tomato paste optional
- 2 green or red bell peppers chopped
- half an onion diced
- 3 cloves garlic minced
- 1 tablespoon Creole seasoning
- 1 teaspoons –2salt
- serve with – rice cheese, cilantro, green onions, hot sauce, sour cream, etc.

- Prep all your ingredients.
- Cook everything together in an Instant Pot for about 8 minutes.
- Shred chicken directly in the pot. Taste and adjust, and serve over rice topped with whatever you like!
