We had friends over last weekend, so I made this fresh basil vinaigrette from scratch and it was SO good. It was super easy to make… it comes together in just a couple minutes in the food processer. Homemade dressings are a really easy way to eat healthy without sacrificing any flavor. I’ll definitely be making this regularly from now on! It’s delicious on tomato salad, pasta salad, or even drizzled over your favorite chicken or fish recipe.
I make my instant pot shredded chicken often to eat throughout the week for lunches, so I think I’ll add this dressing to my meal prep and use it to top the chicken on a bed of lettuce. Yum!

- 1 garlic clove
- 1 cup packed basil leaves
- 1/4 cup extra virgin olive oil
- 1 1/2 tablespoons champagne vinegar
- Pinch crushed red pepper
- Salt and pepper

- In a food processor, pulse the garlic until chopped. Add the basil and pulse until finely chopped. Add the oil, vinegar, and crushed red pepper and process until smooth. Season with salt and pepper.
