I found the perfect fall and winter recipe to go with the cornbread recipe I shared last week! This stew is warm and hearty and is so comforting after a cold day. It takes minimal ingredients and prep time too! You probably already have most of the ingredients on hand. Not to mention this recipe is healthy but still filling.

The best part is that it cooks all day in the slow cooker while you’re away, so you can come home to an easy dinner! The best. This would be so yummy for meal prep for lunches all week long too. Let mw know if you try it!

Ingredients
- 2 cups dried French lentils
- 12 ounces cooked andouille-style chicken sausage cut into 1-inch pieces
- 3 cups chopped kale leaves
- 1 medium onion diced
- 2 cloves garlic minced
- 6 cups low-sodium chicken broth
- 2 sprigs fresh thyme
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper

Instructions
- Place all the ingredients in a 6-quart or larger slow cooker and stir to combine. Cover and cook on the LOW setting until the lentils are tender, about 8 hours.
