For dinner last night, I made my go-to, super easy crockpot roast! I shared it on my Instagram stories and got a lot of questions so I thought I’d post my quick recipe here. This is such an easy meal for weeknights, and we almost always have the ingredients on hand.

The boys love this roast, so I like to keep it in our meal routine, especially during the fall and winter. We serve it with dinner rolls and these green beans, but it would be great over mashed potatoes too!

Instructions
- Salt and pepper both sides of the chuck roast. Slice the onion.
- Put half of the sliced onion in the crockpot. Lay the roast on top. Place the rest of the sliced onion on top of the roast. Pour in the beef broth.
- Cook on low for 8 hours.
